
If you know me at all, you know that I LOVE pasta. So anytime I find a good pasta dish on Pinterest, I become obsessed. This particular recipe I found is especially good because not only is it delicious, but it's also healthier. Packed full of broccoli and and spinach, you not only get a good dose of veggies, but it's also meatless. I'm always a fan of meatless dishes. It's nice being able to cut down on meat consumption. Even without meat, this recipe is super filling. On top of all that, it's super quick and easy to make! Perfect for busy nights. I would highly recommend this dish if you like lemon, broccoli, and pasta of course.

3 quarts water
1 tablespoon salt
1 1/2 - 2 pounds fresh broccoli
1 pound fresh rotini pasta
3-4 cups spinach
4 tablespoons butter
1 large lemon zested and juiced
2 cloves garlic, crushed and minced
1/4 or 1/2 teaspoon crushed red pepper
1 cup fresh Parmesan
olive oil (to taste)
salt and pepper
fresh lemon wedges (for garnish and taste)
Total prep/cook time: 20 minutes
