I will be one of the first to admit that I am by no means a morning person. I'm rather zombie like stomping around my house each morning until my morning tea kicks in with my dosage of caffeine, until then I should come with the warning label "handle at your own risk". I'm terrible at mornings and want nothing more than to hold onto as many precious moments of sleep that I can. That being said I don't have the patience to make my lunch in the morning and having anything pre-made is perfect.
This Honey Mustard Shrimp Salad is perfect for not only a tasty dinner, but the left overs themselves make delicious mason jar salads that are great for my need to simply grab and go in the morning. Not only is it perfect for a lunch for me at work, but it also is a healthier lunch option which is great for my New Year's Resolution. There's a nice amount of protein and the salad ingredients can be changed to fit different tastes as well.
