Every now and then I will find a wonderful recipe during my internet searches and Pinterest binges that I just have to try (almost always adding my own personal touches). A little bit ago, I found a BBQ Chicken Tostadas "recipe". I put recipe in quotations here, because what I actually found on Pinterest was a pin to a blog reviewing the recipe without linking to or providing the actual recipe (which frustrated me when I went to attempt the recipe). Fortunately the review said that the recipe was fairly straight forward and gave a brief description of what I would need (Chicken, BBQ sauce, Tostada shells, and cheese). I, of course, make it my own by seasoning it like a mad woman (I am obsessed with using spices and seasonings), and the end results were above expectation. My boyfriend was impressed as well and asked that I definitely make them again.
Now, I am not going to just review the recipe like the other blog did, as I am sure none of you would appreciate that too much. So, with no further delay, I give you the recipe.
Prep Time: 15 minutes Cook Time: 3-4 hours and 5 minutes
What you'll need:
6 Tostada shells
2 large chicken breasts
2 stalks Green onions, diced
Mexican blend shredded cheese
1 cup BBQ Sauce (whatever your favorite kind is)
Dash of Chili powder
Dash of Garlic powder
Salt and Pepper to taste
Dash of Crushed Red Pepper
1 tsp Taco Seasoning
Step One: Clean the chicken breasts. If the white stuff and veins don't bother you, don't worry about it, but if you're like me and hate that stuff, clean the chicken. When that is done, place the chicken breasts in the slow cooker. Put in the seasonings with the breasts. I did a dash of the chili, garlic, salt, pepper, and crushed red pepper, and then about a teaspoon of the taco seasoning. Next, fill the slow cooker with water until the breasts are just barely covered. Stir so the seasonings mix with the water and evenly coat both breasts. Cover and cook on high for about 3 to 4 hours. (My slow cooker cooks hot, so it only took about 3 hours for me).
Step two: After 3 to 4 hours, the chicken should be nice and tender. Remove from slow cooker and shred with two forks. Now, you can either dump the water and put it back in the slow cooker, or you can grab a clean bowl (making more dishes). This is up to you. Mix with half the green onion and a cup of BBQ sauce. Mix until all the chicken is well coated.
Step Three: Preheat oven to 350. Spray a cookie sheet with cooking spray and place 6 tostada shells out.
Step Four: Evenly separate the chicken mixture across the 6 shells. 2 breasts should make 6 tostadas perfectly. Once chicken has been dispersed, top with cheese and the left over green onion. Place in oven and bake for 5 minutes.
Step Five: Remove from oven, drizzle with more BBQ sauce and serve.
